What's For Dinner? Don't Forget About Pesto!

I'm at that point where the amount of food in the house is dwindling and I'm not going to the store until Monday. So last night was a pantry raid and turned out pretty good. 

What did I assemble:

  • Gluten Free Penne
  • Vegan Kale Pesto from Trader Joe's
  • Italian Chickage Sausage
  • Goat Cheese
  • Pine Nuts

All these things are consistently in my pantry and refrigerator. So when there's nothing to make, I have some fall-back options. The goat cheese and pine nuts were a last minute addition to mix up the texture. I could of put shaved parmesan on there but wanted to switch it up. I SHOULD OF roasted the pine nuts but my pan was already dirty and I didn't want to dirty up another one. If I thought ahead, I would of roasted the pine nuts first before cooking the sausage.

**Helpful Tip** Always have your pantry stocked with nuts & seeds. They are an easy addition to a salad, pasta or vegetable dish in order to give it more texture.
